Wonton Soup


So, this is a recipe that I just kind of improvised. I make a small batch that serves 2.

Ingredients:
2/3 to1/2 box chicken broth
2 1/2 cups water
Pepper to taste.
Dynasty wonton soup mix -1 packet
1 softball size ball of ground pork.
Woton Wrapers - cut in half on a diagonal

Toppings
Crunch noodles
Green onions

Put the chicken broth, water, pepper, and wonton mix a pot and bring to a boil.

While cooking I make tiny pork balls. It is important not to make them to big (think peanut M&M) - if you do your woton's will not seal. I make around 25 to 30 tiny pork balls. With a cup of water on the side of the cutting board I then wet my finger and run it along the outside of the woton. Place the meatball in the center fold the woton in half -pressing the edges together.

When the broth is at a rolling boil drop in wotons. I let it boil for 4 to 5 minutes. The wotons will begin to float to the top.

Top with green onions or crunch noodles and ENJOY!!!

Hummus

I have a deep love for my food processor.  It is a Kichen Aid and does a great job.  One of my favorite things to make is humus!   I used can garbanzo beans, but wash them really well in a strainer.  This makes about 4 Jodi size servings.

Place the follow items in the food processor and pulse.

1/2 onion
1 teaspoon garlic - or more to your taste.
2 1/2 teaspoons olive oil.
small amount of chili powder and cumin

Then add rinsed beans and puree. This is just a guideline and I encourage you to play around with this. I love the pita chips in the photo- I found them in deli section of the grocery store.
